    Pistachio & Berry Smoothie Bowl

    Ingredients:
    1 cup organic frozen mixed berries (blueberries, raspberries, strawberries)
    1 organic banana (fresh or frozen)
    ½ cup plant-based milk (almond, oat, soy)
    1 scoop plant-based protein powder (optional)
    2 tbsp activated pistachios, roughly chopped
    1 tbsp chia seeds
    Fresh berries for topping
    Drizzle of honey or maple syrup (optional)
     

    Method:
    1. In a blender, combine frozen berries, banana, plant-based milk, and protein powder (if using). Blend until smooth.
    2. Pour into a bowl.
    3. Top with chopped activated pistachios, chia seeds, fresh berries, and a drizzle of honey or maple syrup.
    4. Serve immediately and enjoy a nourishing, energising start to your day.

     

    Gluten-Free & Vegan Pistachio Pesto Pasta

    Ingredients:
    300g gluten-free pasta (brown rice, quinoa, or lentil pasta works beautifully)
    1 cup fresh basil leaves
    ½ cup Activated Pistachios
    2 cloves garlic
    ¼ cup nutritional yeast (for a cheesy flavour without dairy)
    ½ cup extra virgin olive oil
    Juice of 1 lemon
    Sea salt & black pepper to taste
    Cherry tomatoes and extra pistachios for garnish

    Method:
    1. Cook the gluten-free pasta according to package instructions. Drain and set aside.
    2. In a food processor, blend basil leaves, Activated Pistachios, garlic, nutritional yeast, olive oil, and lemon juice until smooth. Add a little water if needed to reach a creamy consistency.
    3. Season the pesto with sea salt and black pepper to taste.
    4. Toss the cooked pasta with the pistachio pesto until evenly coated.
    5. Serve topped with halved cherry tomatoes and extra chopped pistachios for a burst of flavour and crunch.
