Homemade Seeded Energy Bars
Ingredients
1 cup Medjool dates, pitted
1 ½ cups rolled oats (use gluten-free if needed)
cup nut butter (almond, peanut, or cashew)
¼ cup maple syrup or honey
½ cup Activated Seed Mix
¼ cup dark chocolate chips (optional, for extra indulgence)
Pinch of sea salt
Method:
1. Prepare the dates: Soak the pitted dates in warm water for 10 minutes if they’re firm. Drain well.
2. Blend the base: In a food processor, blend dates and nut butter until a sticky paste forms.
3. Add dry ingredients: Add oats, maple syrup (or honey), and a pinch of salt. Pulse until combined and the mixture sticks together when pressed.
4. Mix in the seeds: Transfer to a bowl and stir through the Activated Seed Mix and chocolate chips (if using).
5. Set in tray: Line a small baking dish (20cm x 20cm works well) with baking paper. Press mixture firmly into the dish using the back of a spoon.
6. Chill: Place in the fridge for at least 2 hours to firm up.
7. Slice & enjoy: Cut into bars or squares. Store in an airtight container in the fridge for up to 1 week, or freeze for longer freshness.
